Level 2 Award : Foundation Certificate in Food Hygiene

The law states - "The proprietor of a food business shall ensure that food handlers engaged in the food business are supervised and instructed and/or trained in food hygiene matters commensurate with their work activities".

Training providers have identified a growing need to make learning more relevant to specific business environments to increase effectiveness. New qualifications are required to address new National Occupational Standards reflecting sector-specific needs.

In line with this demand, our Level 2 Award, Foundation Certificate in Food Hygiene has been designed to address the food safety needs of the catering and hospitality sector.

Certificated Food Hygiene

Our Food Safety Team have developed a certificated food hygiene course suitable for all persons involved in food handling. The Level 2 Award in Food Safety is aimed specifically at food handlers who have not previously received any formal food hygiene training.

This Certificate is nationally recognised and is equivalent to the now obsolete CIEH Level 2 Food Safety in Catering. The course is run locally by the Environmental Health staff in the Food Hygiene and Safety Team. The overall aim is to develop a level of understanding of the basic principles of food hygiene. The following is an outline of the course contents:

  • Legislation
  • Food Safety Hazards
  • Temperature Control
  • Refrigeration, Chilling and Cold Holding
  • Cooking, Hot Holding and Reheating
  • Food Handling
  • Principles of Safe Food Storage
  • Cleaning
  • Food Premises and Equipment

Course duration: Six hours minimum
Assessment method: 30 multiple choice questions
QCA Accredited: Yes
Level: New Level 2
Suggested progression on completion: Level 3 Award in Supervising Food Safety in Catering

Candidates with reading difficulties may be read the questions on a one to one basis. Successful candidates are awarded the Level 2 Award in Food Safety and Catering. This may be used as a foundation for further studies.


Courses are held at our Southfields Council Offices. The fee is £50 (including VAT) per person. Cheques should be made payable to Charnwood Borough Council. No discounts are available.

As the number of places on the course are limited you are advised to give this your early attention. Exam retakes are available at a fee of £15 per candidate.
